Marutama Ramen – An Exquisite Bowl of Chicken Broth Ramen

Out of all the different ramen broths I’ve tried, chicken broth ramen is not one of them, and I’ve always wondered what it’d taste like. Chicken broth ramen is a rarity in Singapore as many ramen restaurants are dominated by either Tonkotsu, Shoyu, Shio or Miso broths.

Enter Marutama Ramen, which was founded by Tetsuya Kudo in 2001 in Kawaguchi Japan. Its specialty is its creamy chicken broth ramen(Toripai Tan). Since then, Marutama Ramen has expanded overseas and currently has 5 outlets in Singapore. I visited its outlet in Clarke Quay Central and decided to give it a try.

The outlet had a very authentic Japanese feel to it as there were counter seats which is what you will find in ramen restaurants in Japan, and there was Japanese music playing in the background as well. I ordered the signature Marutama Ra-men($14.90). The staff were also courteous enough to provide warm water when I requested it.

The ramen came in a bowl of thick Toripai Tan with a piece of chashu, egg and surprisingly a large amount of spring onions. It smelled homely, and I couldn’t wait to dig in. I first tried the soup, which was rich, creamy and had the profound taste of chicken. I enjoyed it thoroughly as it was a very comforting and flavourful bowl of soup. The noodles were thin but had the texture of wonton noodles. They were very chewy, soft and were delicious.

The egg was flawless as the egg white was soft and the yolk was cooked perfectly. It was salty, creamy and rich and it’s definitely up there as one of the best ramen eggs I’ve had! The chashu was tasty as it was both sweet and salty. The meat was succulent and it had a good amount of fat which just melted in my mouth. 

Marutama’s Toripai Tan ramen has been a refreshing change from your usual Tonkotsu ramen. It serves as a baseline as I search for other ramen restaurants that serve Toripai Tan ramen. The service was exemplary and it had a quiet yet vibrant aesthetic thanks to the Japanese music. I would recommend Marutama Ramen for ramen lovers who are looking for something different from Tonkotsu ramen.
