Sanpoutei ramen prides itself in its signature Niigata Shoyu Ramen. I’ve always been fascinated to try it ever since I came across their outlet at Shaw House many years ago. Now I finally tried it at their location in Holland Village.
I ordered their signature Niigata Shoyu Ramen($15.00), which came with 2 slices of cha siu, a Japanese egg, a slice of seaweed and much to my surprise, chye sim as the vegetable.
The Shoyu broth was the standout for me. It was very clear, delicate, and tasted very clean. It wasn’t overly salty, though it did become salty the more I drank it. Sanpoutei has mastered the art of creating a refined Shoyu broth. I usually prefer Tonkotsu ramen due to their rich and creamy Tonkotsu broth, so Sanpoutei’s Shoyu broth was a different and exquisite one.
The noodles were slightly thicker than what you would find in tonkotsu ramen, but I fell in love with them as they were silky, smooth, and chewy. This made them easy to swallow and went well with the broth.
I loved the strong porky taste of the cha siu which had a decent amount of fat on it. The meat was soft and melted in my mouth along with the layer of fat. It also had smoky flavour. I’m guessing they blow-torched the cha siu for a few seconds before putting it in the ramen.
The egg was the usual Japanese egg that is always found in ramen restaurants. It had a creamy yolk which was rich in flavour and the egg white was soft. In addition, I found the chye sim to be as special as the first time I tried it served at a ramen restaurant. Even though the portion of the chye sim was small, it was crunchy and sweet. Definitely a welcome change to the beansprouts that ramen restaurants always serve.
Sanpoutei Ramen has served one of the best Shoyu ramen I’ve ever had and I salute their dedication to offering their specialty Niigata Shoyu Ramen.
